Zapata
A key figure at Edelmira is Marco Romero Santiz, born and raised in the indigenous Tzeltal community of Emiliano Zapata, Chiapas, where his family has been producing coffee for three generations. Today, Marco serves as Coffee Processing Supervisor at Beneficio Edelmira, our micromill, as well as Relations Manager for all Tzeltal communities. Over the past two years, Marco has mapped every coffee variety on every plot in his community. Through this work, he identified opportunities to create more value for farmers by separating and processing the best varieties separately. At the top of his list was this Maragogype strain.
